Acclaimed chef Magnus Nilsson has just released a new book.

Nilsson currently holds two Michelin stars at his restaurant Fäviken in Sweden. With his most recent book, The Nordic Baking Book, Nilsson has created and compiled over 450 recipes to share with readers. The recipes have a broad range and seem to incorporate a lot of Nordic influence throughout.
“The whole project started six years ago, and the idea was to chronicle and document the whole of the Nordic food culture and baking is a huge part of that. So it seemed impossible to do that without having a book on baking. This six-year project has been split into two publications, The Nordic Cook Book and The Nordic Baking Book,” said Nilsson.
The difference with this book is that Nilsson himself put together the recipes, while Petrus Jakobsson (of the great Petrus bakery in Stockholm) was enlisted to bake and sample the recipes that went into the book. Nilsson then photographed the creations.
When asked what his favorite recipe in the book is, Nilsson explained, “Soft Swedish flatbread – which are very much linked to my childhood – or the classic cinnamon bun.”
“All the recipes in this book are recipes that people bake today. There are a few historical ones to add context but the majority are ones being baked at home today. So its very approachable in that sense,” explained Nillson.
Nillson will be touring to promote his book, before heading back to work at his restaurant.
